This book is for anyone interested in the honey of Australian native stingless bees.

 

This book grew organically as a small group of stingless beekeepers and scientists set out to create a food standard for our native bee honey. I am greatly indebted to Tim Heard for early-stage production advice for this book. There were valuable suggestions for content, and he connected me with first class contributors and reviewers. The food safety section benefited enormously from review and comments from my ANBA honey committee, and in particular Peter Abbott who I cannot thank enough. Norhasnida Zawawi and Giorgio Venturieri deserve a special mention for their contributions on Malaysian and Brazilian methods and technologies. As a first-time writer the middle and late-stage production process were of great interest to me. Glenbo Craig has acted as an adviser, designer, and producer. Glenbo has transformed a rough word document into this visually pleasing work and it is a credit to his craft.
